Job summary: Skilled Portuguese pastry chef specializing in traditional and custard-based pastries, lamination techniques, and production management in a professional kitchen environment.
Specialized Job Duties:
- Prepare traditional Portuguese pastries, including custard-based and laminated dough products using authentic methods.
- Execute precise custard formulations, temperature control, and baking techniques required for Portuguese pastries.
- Manage lamination processes for high-volume pastry production.
- Adjust pastry production for humidity, temperature, and service volume.
- Train and supervise staff on specialized pastry techniques and consistency standards.
- Oversee pastry production scheduling and ingredient preparation.
- Ensure quality, presentation, and flavor consistency across all pastry items.
- Maintain compliance with Canadian food safety standards.
- Troubleshoot pastry defects related to lamination, custard setting, and bake timing.
- Maintain documentation of specialized pastry recipes and methods.
- Prepare traditional Portuguese hot food items, including charcoal-style meats and classic kitchen dishes using authentic seasoning and cooking methods.
- Manage overnight marinades, spice formulations, and protein preparation rooted in Portuguese culinary tradition.
- Operate and maintain rotating charcoal cooking equipment and commercial kitchen systems.
Specialized Requirements:
- 7+ years’ experience as a pastry chef specializing in Portuguese and European pastries.
- Advanced experience with laminated doughs and custard-based products.
- Experience training kitchen or pastry staff.
- Fluency in Portuguese is mandatory.
- Foreign work experience is an asset.
- Cook's trade certification or equivalent credentials, training and experience are required.
- A certificate in culinary arts is an asset.
